I use homemade Cajun seasoning all the time and love it. One of my go-tos. I learned a few extra tips from a few chefs down in New Orleans on how to tweak it and make it your own. Super great! I like mine a touch extra spicy. Nicely done. Your seasoning mixes are great and a wonderful resource. A request for a Moroccan blend! Thanks for sharing this spice blend — I will definitely try it.

I do make a similar blend in a large batch and give small mason jars of it for Xmas gifts to friends. They love this gift. I usually buy ready-made Cajun seasoning and use it to marinate meats, especially poultry. Really good Cajun seasoning better than the store bought. Thanks for the recipe. This blend was introduced to me a few years ago. I worked in a southern kitchen and we learned quite a bit. My favorite are Cajun shrimp tacos.

Perfect blend…Ive had store bought in the past but having tried this, I will always make my own from now on…I boiled some basmati rice, diced grms of chicken and added 2 good teaspoons of this mix…Fried it up in a couple of tablespoons of olive oil then added the rice and stir fried it for a couple of mins, adding a bit of chopped fresh coriander….

    I stole this book from a friend about 10 years ago. It was his favorite cookbook and he did something to piss me off. Now I open this book at least once a month! There are quick pasta sauces and slow pasta dishes. All are categorized under the main ingredient beans, fish, cheese. My favorite is the Tonno Limone. Lemon and tuna pasta.     Excellent resource for when you want to make a pasta with whatever vegetable you have on hand and would like a little guided expertise provided you don't mind a little cream and butter with your pasta. Can't wait to try the Pasta al Limone recipe from the favorite Vecchia Roma restaurant.

Every recipe I have tried in this book has been good and it is a great resource if you have some vegetables you need to use up as the recipes are listed by main ingredient.

    It also tells the history behind a lot of the recipes which is interesting especially for Spaghetti alla Puttanesca.

    Jan 21, Matthew rated it it was amazing. I've had this book now for 11 years now and still come back to it, especially since becoming vegetarian. The recipes are fantastic and I love the layout by primary ingredient. They should really reissue this book as it is one of the few cookbooks I've bought that I've continually used. One of my most loved cookery books. Delicious, simple-to-make sauces using a nice variety of vegetables, along with lovely illustrations.
